Asian Inspired Nourish Bowl

INGREDIENTS

Baked Veggies Marinade

2 tbsp Niulife Naked Cocomino sauce

1/2 tsp freshly ground ginger

1 tbsp minced garlic

2 tsp sesame oil

salt + pepper

Baked Tofu Marinade

1 tbsp peanut butter

1 1/2 tbsp Niulife Naked Cocomino sauce

1/2 tbsp lime juice

salt + pepper
.

METHOD

  1. Whisk all veggie marinade ingredients together and marinade veggies of choice in the mixture.
  2. Bake in oven at 180°C until crispy.
  3. Whisk all tofu marinade ingredients together and coat tofu blocks with marinade for at least 30min (or even overnight).
  4. Bake in oven at oven at 180°C until crispy.
  5. Combine veggies and tofu in a bowl and enjoy!
