Balsamic Mushroom Ragu

INGREDIENTS:

4 cups mushroom, finely chopped
1 large carrot, grated
1 small eggplant, diced
2 big handfuls of spinach
1 small red onion, diced
2 garlic cloves, crushed
A pinch of red pepper flakes
A pinch of cinnamon
S & P to taste

METHOD:

Sauté all above ingredients in Niulife Organic Coconut Ghee until the onions & eggplant are tender & mushrooms have caramelized slightly.

SAUCE INGREDIENTS:
1 can diced tomatoes
2 Tbsp of tomato paste
1 Tbsp cashew butter 
1 tsp of Niulife Coconut Balsamic Vinegar
A few fresh basil leaves roughly chopped
1/2 cup of your favourite broth

METHOD:

1. Stir in all sauce ingredients until combined.

2. Add in sautéed vegetable mix

3. Simmer until nicely reduced

4. Serve on a mountain of zucchini noodles (or regular spaghetti, a baked potato or even just some wilted greens)
