Chicken Lettuce Cups

This recipe is super easy and a great option for lunch or dinner.


Ingredients:


500g chicken mince
1 tablespoon olive oil
3 cloves garlic, crushed
1 lemon grass stalk, finely sliced
1 tablespoon fresh grated ginger
1/2 fresh lime, juiced
1/4 cup of Niulife Naked or Naked Extra Thick Coconut Amino Sauce 
1/4 red cabbage, thinly sliced
3 carrots, grated
1 cup fresh coriander (cilantro) leaves, chopped
1 tablespoon fresh mint, chopped
1 baby cos lettuce

1. Heat oil in a frypan on medium heat.
2. Add ginger, lemongrass and garlic.
3. Add the chicken mince, stir until cooked.
4. Add lime juice and coconut aminos.
5. Add carrot and cabbage. Cook until soft.
6. Remove from heat and add to lettuce leaves
7. Enjoy! ?
