Chocolate Hazelnut Spread with MCT

This simple recipe will blow your mind! You won't find a healthier chocolate hazelnut spread! It has only 6 ingredients and the added benefit of coconut MCT (absolutely no hint of coconut flavour), which supports a healthy gut, improves blood sugar metabolism and enhances cognitive function - and we're using it in more than just a coffee or smoothie.

Ingredients:

2 1/2 cups hazelnuts

1/4 cup cacao powder

1/4 cup Niulife Coconut Syrup coconut or to desired sweetness)

2 tsp vanilla essence

1/2 tsp sea salt

3-4 tbsp Niulife Coconut MCT oil

Method:


Preheat oven to 170 degrees C.

Spread hazelnuts in a lined baking tray and roast for 6-7 minutes.

Allow to cool and rub the hazelnuts together with baking paper until the skins fall off.

Transfer to a high-speed powerful blender. Blend until it forms hazelnut butter. This will take a few minutes.

Add all other ingredients, except the Coconut MCT oil. Blend until desired texture is reached - we like to retain a bit of texture but if you prefer a smooth spread, blend for a little longer.

Add MCT oil and blend for a further minute or so.

Transfer to an air-tight jar and store in the fridge.
