Coconut Raspberry Chia Parfait
Entertaining at home this Christmas? Need something Christmassy that will suit nearly all dietary requirements? This ticks all the boxes and it's quick & easy too - Perfect!
Serves 2
Ingredients:
1 cup of fresh or frozen raspberries
3 teaspoons of Niulife Coconut Syrup or sweetener of choice (1 teaspoon for the coconut milk)
1 cup of coconut milk (whisk 4-6 teaspoons of Niulife Coconut Milk Powder in warm water)
6 tablespoons of coconut yoghurt
½ cup chia seeds
To serve:
Fresh raspberries
If using fresh raspberries, crush in a bowl, add 2 teaspoons of coconut syrup or sweetener of choice and 1-2 tablespoons of hot water, mix together. If using frozen raspberries, heat in a small saucepan, or in microwave with 2 teaspoons of coconut syrup or sweetener of choice. You want a loose jam like consistency with pieces of raspberry.
In a separate bowl add chia seeds to coconut milk sweetened with 1 teaspoon of coconut syrup or sweetener of choice, mix and leave set in fridge for 30 minutes.
In serving glass jars, or tall glasses, layer the raspberry, the chia pudding, coconut yoghurt, top with fresh raspberries and sprinkle with desiccated coconut. Enjoy!
