Green Goddess Salad Dressing
Looking for ways to incorporate MCT into your diet that's not a smoothie or a bulletproof coffee? This salad dressing packs a punch and ticks all the boxes.
Ingredients
One large ripe avocado
½ cup avocado or flaxseed oil
1/3 cup roughly chopped basil & coriander
¼ cup organic apple cider vinegar (with the mother)
2-3 cloves of garlic peeled and roughly chopped
3 tbsp of fresh lemon juice
2 tbsp of Niulife MCT oil
¼ tsp celtic sea salt
Cracked black pepper
Method
Put all the ingredients into food processor or blender. Blend on high until creamy and smooth. Prepare your favourite salad mix and enjoy.
This makes up several serves and will keep for a week in an airtight container in the fridge.
