Roast Pumpkin Buddha Bowl
Nutrition and balance are key Buddhist concepts and might be why these usually highly balanced & nutritious bowls of food took on the name of Buddha. Monks historically took their bowls to the village and received whatever food the locals were willing to give. Either way this one-bowl wonder of goodness has been front of stage for several years now and doesn't look like waning anytime soon. Our lovely mother & daughter duo @healthyluxe have created this beauty using our Extra Thick Naked coconut amino sauce.
Ingredients
400 grams pumpkin, chopped
1 ½ tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 cup cooked brown rice
¾ cup edamame beans, steamed and shelled
¾ cup snow peas, steamed and roughly chopped
1 cup spinach leaves
¾ cup radicchio, roughly chopped
1 small cucumber, sliced
1 avocado, sliced
1 tbsp sesame seeds
1 tbsp onion flakes
2 radishes, sliced (optional)
2-3 tbsp Niulife Organic Naked Extra Thick Coconut Amino Sauce
Method
1. Preheat oven to 200 degrees Celsius.
2. Arrange chopped pumpkin on a lined baking tray. Drizzle with olive oil and season with salt, pepper and paprika.
3. Roast for 20-25 minutes or until soft.
4. Meanwhile combine cooked rice, with edamame beans and snow peas. Mix.
5. Place rice in a large serving bowl.
6. Arrange spinach, radicchio, and cucumber in the bowl, leaving room for the pumpkin.
7. Add pumpkin and top with avocado, sesame seeds, onion flakes and radish.
8. Drizzle with Niulife Organic Naked Extra Thick Coconut Amino Sauce.
9. Serve immediately.
