Vegan Tofu Scramble by Elsa's Wholesome Life
Our Coconut Oil and Cocomino’s are a great staple for many recipes, including this creative vegan alternative tofu scramble by Instagram star @elsas_wholesomelife!
Serves 2
Approx. 12 Grams of protein equal
to 2 medium sized eggs
Ingredients:
200g Tofu (medium), drained and mashed with a fork
2 Garlic cloves, crushed
½ Brown Onion, diced
½ tbsp of Niulife Coconut Oil
1 ½ tbsp Niulife Original Cocomino
¼ tbsp Turmeric Powder
½ TBSP Black Pepper
Pinch of Salt (to taste)
¼ tbsp Hemp Seeds
1 tbsp Nutritional Yeast
½ Chilli Flakes
Method:
- Heat the pan to medium heat, add the Niulife coconut oil and onion. Fry for 2 minutes, stirring, or until translucent, add the garlic and fry for 30 seconds.
- Add the tofu to the pan, fry for another 2 minutes.
- Add the turmeric, pepper, and paprika as you continue to fry for another 1-2 minutes, whilst stirring.
- Add our Niulife Original Cocomino, stir through then remove from heat. Add enough salt to suit your taste preference.
- Remove tofu scramble from the pan, place pan back on the heat, add hemp seeds, nutritional yeast and chilli flakes, dry fry for 1 minute.
- Serve your tofu scramble over toast with avocado and a sprinkle of the hemp-yeast-chilli seasoning.

Tip:
Create a big breakfast buddha bowl with Niulife balsamic vinegar roasted tomatoes, sautéed kale, roasted pumpkin, vegan feta and coconut bacon.
